Patatas Bravas – Spanish style fried potatoes

Do you like patatas bravas? I dig them! This recipe was a huge success with us. It is very easy to make and tastes just like you remember from your Spanish holiday.

I used boiled potatoes if you want to try double frying technic here is te formula:

Attach deep-fry thermometer to the side of a deep saucepan or frying pan, pour a generous amount of oil and heat it up. We want our potatoes to be tender on the inside and crispy on the outside. The oil should be at 225 F  It should take around 8-10 minutes until they are tender – you can check by piercing them with a knife and making sure they’re soft and yielding. Remove the potatoes onto a plate using a slotted spoon and increase the temperature. We want the oil to reach  350 F which means it’s very hot but not smoking. Place the potatoes back in the pan and they should turn golden brown within 5-7 minutes. Keep a close eye on them as they can change color quickly.

Ingredients
 
 

  • 2 Potatoes per person
  • 400 ml Rapeseed oil for frying
  • Salt

Instructions
 

  • In a pot, boil the potatoes for 20 minutes.
  • Then peel them and cut into small pieces
  • Season to taste with salt
  • Heat oil in a pan. When the oil becomes very hot, add the potato pieces and fry them until golden.
  • I fry in a small – 15 cm (6 inches) diameter bottom stainless steel sauce pan with approx. 400 ml rapeseed oil.
