Dear food lovers, join me in my kitchen today as we explore the wonderful world of Spanish cuisine with my recipe for the beloved Patatas Bravas. This classic tapa dish is a staple in Spain and consists of crispy fried potatoes smothered in a rich and spicy tomato sauce.
Patatas Bravas are the perfect addition to any meal, whether served as an appetizer, side dish, or even a hearty snack. The dish is simple yet flavorful, with the crispy potatoes providing a satisfying crunch and the spicy tomato sauce delivering a kick of heat.
To make this dish, you’ll need only a few basic ingredients, including potatoes, olive oil, garlic, tomatoes, and a few key spices like smoked paprika and cayenne pepper. The potatoes are first parboiled, then fried until crispy and golden brown, before being generously coated with the vibrant tomato sauce.
What I love most about Patatas Bravas is its ability to bring people together. It’s a dish that’s meant to be shared, enjoyed with good company and a glass of wine. It’s a dish that embodies the warmth and conviviality of Spanish culture, and is sure to transport you to the sun-drenched streets of Madrid.
So come on, let’s get cooking and discover the delicious world of Patatas Bravas. Follow my recipe, and you’ll have a plate full of crispy, spicy potatoes in no time!
I used boiled potatoes if you want to try double frying technic here is te formula:
Attach deep-fry thermometer to the side of a deep saucepan or frying pan, pour a generous amount of oil and heat it up. We want our potatoes to be tender on the inside and crispy on the outside. The oil should be at 225 F It should take around 8-10 minutes until they are tender – you can check by piercing them with a knife and making sure they’re soft and yielding. Remove the potatoes onto a plate using a slotted spoon and increase the temperature. We want the oil to reach 350 F which means it’s very hot but not smoking. Place the potatoes back in the pan and they should turn golden brown within 5-7 minutes. Keep a close eye on them as they can change color quickly.
